Lemon, Ricotta and Basil Bruschetta

What a busy two weeks it has been. Time has been sucked into a vacuum and disappeared over the past two weeks. At work I have been completing the specifications and costings for five full interior design projects ready to present to my client this week. I love the schemes that I have had to work with – Winter Nordic, Nautical Hampton’s, Singapore Resort, Relaxed Scandi and Tribal Luxe. I love all the schemes but when working on so many in unison there is always a favourite – mine would have to be the relaxed scandi with the cool, tonal greys, natural woods and textured elements.

When work gets busy it becomes all consuming and so quick and simple meals are necessary. This bruschetta is a quick, go to meal as it is SO easy to make whilst also being delicious. The creamy ricotta works so well with the sweet honey and basil but here’s a tip … please make sure you season with pepper and in particular lemon and salt. I promise you this will elevate the bruschetta into something that is bland to something totally zesty and moreish.

So next week has a couple of exciting moments – I’m sitting my interview and test to become an Australian citizen (it’s only taken eight years!). I’m a bit nervous as there are a lot of questions on the government and about politics and these areas have never been my strong point! Also next week I have an exciting day shooting with Inside Out Magazine as part of a styling competition. I’ll share more with you later when I’m allowed and ask for your support as there is a public voting involved. Lastly, it’s Mother’s Day on Sunday so I’m looking forward to a relaxed day with my girls who are always so proud to give me the cards and gifts they have made. (Pancakes in bed will hopefully be on the cards!)

Lemon, Ricotta and Basil Bruscetta

 

INGREDIENTS

5 Slices of Bread

Olive Oil for brushing bread

1/2 Cup Ricotta

1/4 Cup Basil Leaves

1 Tablespoon Lemon Zest

Honey to Drizzle.

Salt and Pepper to Season

METHOD

1. Slice bread. Brush with olive oil.

2. Grill bread until browned.

3. Spoon ricotta onto slices.

4. Sprinkle with basil.

5. Drizzle with honey

6. Season with salt and pepper

5. Sprinkle with lemon zest
